Kickin' Cucumber Salad

Using the cucumbers we grow on the farm and a few simple ingredients, I made this spicy—but refreshing— cucumber salad. This is a light, easy-to-make salad with a bit of a bite, perfect for the busy (and scorching) summer months.

INGREDIENTS:

  • 3 cucumbers

  • 1/2 cup roasted and chopped peanuts

  • 3 tbs soy soy sauce

  • 3 tbs rice wine vinegar

  • 2 tsp brown sugar

  • 1 tbs Chile oil (or more if you like it extra spicy)

  • 2 tsp sesame oil

  • 2 cloves of minced garlic

  • extra Chile flakes

  • sesame seeds (optional)



STEP ONE:

Cut your cucumbers into thin slices then add them to a bowl. I used a metal bowl because it will help chill them once we set the salad in the fridge to chill and marinate.


STEP TWO:

In a separate bowl, whisk together the sugar, soy sauce, vinegar, chile sauce, garlic, and chile flakes.

STEP THREE:

Chop your peanuts or pulse them in a food processor until they are to your liking. Then add them to the sliced cucumbers.


STEP FOUR:

Pour the sauce mixture over the cucumbers and peanuts, toss until evenly distributed, then set the salad in the fridge to marinate for at least two hours.


STEP FIVE:

After you’ve let the salad sit, stir it up one last time, and that’s it! You’re done! You can now serve and enjoy this kickin’ salad.
