Easy Zucchini Soup for Cold Days
This soup is as delicious as it is simple. Using only a few common ingredients and favorite seasonings you can whip this up in around 40 minutes.

You’re going to need…
4 TBS butter
2 TBS minced garlic
1 diced white onion
Fresh thyme (to your taste)
1 TBS garlic salt
8 cups diced zucchini
4 to 41/2 cups of veggie broth
1 cup heavy whipping cream
salt and pepper to taste
Additional tools: emulsifying blender
Step One:
Drop your butter into a decent sized soup pot and turn the heat to medium. Once the butter melts and is evenly heated, add in your minced onion, minced garlic, and fresh thyme. Stir and allow to cook until the onions start to soften, then drop in your diced zucchini.
Step Two:
Once the flavors have started to come together, add in the vegetable broth and garlic salt. Allow this to cook until the squash is very tender.
Step Three:
Add your heavy cream and remove the soup from the heat, then begin emulsifying. Stir and blend until the soup has a creamy, smooth consistency.
Step Four:
That’s it! You’re done! Ladle your soup into a bowl and serve with sour cream and a sprinkling of chives.
