Banana Walnut Zucchini Bread

Zucchini bread is a summer favorite, but sometimes we like to put a little spin on Grandma Kath’s recipe. Today, I am going to be showing you how to make banana walnut zucchini bread.

Let’s get started!


DRY INGREDIENTS

  • 3 cups flour

  • 1 tsp. salt

  • 1 tsp. baking soda

  • 1/4 tsp. baking powder

  • 3 tsp cinnamon

WET INGREDIENTS:

  • 2 duck eggs (or 3 eggs)

  • 1 cup oil

  • 2 cups sugar

  • 3 tsp vanilla extract

  • 2 mashed bananas

  • 2 cups grated, peeled zucchinis

Preheat the oven to 325 degrees, and then grease and flour two loaf pans. Set them aside while you begin making your batter.


STEP ONE:

Beat your eggs using a stand mixer and a paddle attachment before adding the sugar. Once the sugar and eggs are creamed, add the oil, the bananas, and the 3 tsp of vanilla extract. Combine thoroughly, and while the mixer is still on, add the peeled zucchini gradually. Once all of your wet ingredients are combined, turn of the stand mixer and let it sit as you turn to your attention to your dry ingredients.

STEP TWO:

Sift together all of your dry ingredients except the walnuts.


STEP THREE:

Once your dry ingredients are sifted together, turn on the stand mixer to a medium low setting and slowly incorporate your dry ingredients. After you are satisfied that the mixture is completely homogenous, add the cup of walnuts while the mixer is still going. Turn it off once the walnuts are evenly distributed.

STEP FOUR:

Pour the mixture into your floured loaf pans, then place them in the preheated oven. Set the timer for 27 minutes, and once the timer goes off, turn the pans and let them cook for another 27 minutes.

When the second timer goes off, remove the loaves and sit them on a cooling rack until they are completely cooled. Once they are, you can remove them from the loaf pans and enjoy!

This bread is so good, and I highly recommend you try it for breakfast with a little bit of butter.
